Start eggplant seeds indoors 6-8 weeks before the last frost date. Sow 1/4" deep. Transplant outside 2 weeks after the last frost date. Full sun. Spacing 16".

Long Purple eggplant is an early-maturing variety with 9" long, narrow fruits that have a dark purple exterior. It's a good choice for northern gardeners. Each plant produces at least 4 fruits.

Kamo eggplant is our all-time favorite. It's simply the earliest, most productive, and most delicious eggplant we've ever grown. It's a gourmet delicacy from the city of Kamo, Japan. It has dense flesh with a creamy texture and sweet flavor. We had a continuous harvest from mid summer to fall, which gave me the opportunity to perfect my ratatouille recipe. Blocky, small to medium-size fruits.

Applegreen is an early-ripening eggplant for northern gardens. The 3" long, oval-shaped fruits are a lovely, light green color. They have thin skin and mild flavor. Developed in 1964 by Elwyn Meader at University of New Hampshire.

Eggplant 'Rosita' (80 days)

Rosita eggplant is one of the most beautiful varieties we have ever grown. The teardrop-shaped, medium-size fruits are a lovely shade of lavender-pink. They grow to about 8" long and 4" wide. The white flesh has a mild flavor. It's not as productive as some varieties, but it is generally satisfactory. It was developed in the 1940s by the Puerto Rico Agricultural Experiment Station.
Eggplant 'Black Beauty' (80 days)

Black Beauty eggplant has large, egg-shaped, purplish-black fruit that grow to 7" long. This is the standard variety that is often sold at farmers markets. It is late to mature, so it's best grown in areas with long summers.

Diamond is a high-quality eggplant with excellent flavor and texture. The dark purple fruits have a greenish-white interior. They grow to 9" x 3". Each 2' tall plant produces 4-6 fruits. Early to ripen. Great for cool climates.
